Webmaster's Favourite Fruit Crumble
Dough: 350g flour; 200g unsalted butter; 50g brown sugar; 2 eggs; pinch of salt
Crumble: 80g flour; 80g oatmeal; 100g sugar; 120g unsalted butter; 1 tsp cinamon
Fruit: seasonal fruit - especially nice if mixed: my favourite is a mix of apricots, strawberries and blueberries; approximately 750g to 1000g in total
 Prepare dough: mix flour, butter, sugar and a pinch of salt in a food processor until consistency resembles breadcrumbs. Remove from the food processor and place in a large bowl. Beat lightly two eggs, add to the bowl and mix thoroughly. Place on a lightly buttered large baking sheet (12" by 18"), spread, and flatten with your fingers until it covers the bottom uniformly. Dust the surface with corn or potato flour.
Place the washed and sliced fruit (don't slice small berries...) on top of the dough.
Prepare crumble: in the same food processor mix gently flour, oatmeal, sugar, cold butter and cinamon. Make sure the mixture remains loose - limit mixing time.
Cover the fruit with the crumble, place in the oven pre-heated to 395F (200C), bake 15 minutes, lower the temperature to 355F (180C), bake for another 15 minutes. Remove from the oven, let it cool and enjoy!
While your utensils and dishes are dirty, you may want to repeat the process and bake second portion - this treat tends to disappear very rapidly! |
