Apple Tart
300g floury potatoes; 100g unsalted butter; 100g sugar; 1.5 cup of flour; 1 egg; 1 tsp baking powder; 500g apples; 1 lemon; 50g rasins; 4 tbsp malmalade; cinnamon; cloves; pinch of salt; icing sugar.
 Boil unpealed potatoes, peal, mash finely or run through a grinder and place on a kneading board sprinkled with flour.
Add flour, sugar and a pinch of salt to the potatoes, as well as lemon rind, butter and baking powder. Cut until well mixed. Add one egg, fold in quickly and place in the fridge to cool.
Meanwhile, sauté pealed and sliced apples with a small amount of water, cloves, and lemon juice, for approximately 5 minutes.
Place 2/3 of the dough on a buttered, flat rectangular pan. Spread with malmalade and bake for 10 minutes at 180C/355F.
Cover with stewed apples, crumble the remainder of the dough and sprinkle over the apples. Bake for another 45 minutes. After removing from the oven sprinkle with icing sugar. Cut into squares after it has cooled. |
